Breakfast inspiration?

Here's a quick Baked Egg recipe from our Event Organiser, Mark

Baked eggs. Serves 2.

  • Preheat your oven to maximum.
  • Butter 2 rammekins
  • In a separate bowl mix 3 eggs, a couple of spoonfuls of natural yoghurt, a pinch of salt and pepper.
  • Spoon the mixture into the rammekins.
  • Cut up a few small cubes of feta cheese and drop them into the rammekins, sprinkle with some cut chives or spring onions.
  • Bake for 10 minutes or so until egg cooked. Serve.

Here's a suggestion from our Operations Manager, Emilie

Chocolate Coconut Almond Balls (makes approx 12)

Ingredients:

1/4 cup rolled oats
3 tbsps cocoa powder
3/4 cup pitted medjool dates
1/2 cup shredded coconut
1/2 cup chopped almonds
1 1/2 tsps warm water

Method:

  1. Mix together oats, cocoa powder, dates and water in a food processor (or blender),
  2. transfer to a bowl and add oats, mix well then make into balls.
  3. Roll in coconut, then roll in almonds.
  4. Store in fridge (should keep for a few days in air tight container)

Here's a quick home made Pizza recipe from our Event Producer, Allison

Flatbreads:

  • 350g self-raising flour (extra for rolling out)
  • 350g natural yoghurt 
  • 1 teaspoon baking powder


Method:

  • Combine all the ingredients in a bowl, mix with a spoon and then use hands to combine further
  • Dust work top with flour
  • Bring it together by kneading for a minute (doesn't need to be for long)
  • Put back in the bowl and cover, you can leave this for up to an hour (I don't think it makes much difference)
  • Dust the work top with flour
  • Divide the dough into about 6-8 equal pieces 
  • Flatten and roll out to approx 2-3mm thick
  • Dry fry them, one at a time, in a frying pan/griddle pan on a hot heat - cook for approximately 1-2 minutes on each side
  • They may puff up a little
  • Between each one, carefully wipe the pan out, with a dry cloth, to remove extra flour as this will burn quickly 

Choose your pizza topping ingredients - recommend SACLA, vegan tomato (or basil) pesto for the base
Put onto a tray and cook at approx 180-200c for about 10-12 minutes (or until the toppings look cooked/cheese melted

Fancy a Hispanic Dessert ? (Espumilla) Meringue Cream

Here's a recipe from our Event Coordinator, Priscila

Ingredients:

  • 8 ripe guavas (if you cannot find fresh ones you can find them on any Latin grocery store)
  • 1- 1 1/2 cups of sugar (adjust based on your preference)
  • 2 egg whites

Garnishes:

  • Berry syrup
  • sprinkles

Method:

  1. Peel the guavas, they should be very soft and ripe
  2. remove the seeds and just keep the meaty flesh parts 
  3. place them in a blender (no water)
  4. then strain the puree and use an electrical blender to mix in the sugar.
  5. add the egg whites to the guava and sugar puree , mix using the electric mixer until you have stiff creamy texture.
  6. serve immediately in bowls or better ice cram cones
  7. drizzle some berry syrup and add the sprinkles
  8. lastly enjoy the flavours!
